chore: Update pasta network section + Revise example 
- Better document differences between `pasta` and `slip4netns`.
- Initial revision on Quadlet example section:
  - `network-online.target` wants/after requirements are implicit. No need to add this.
  - `Network=pasta` not required from Podman 5.0.
  - `HostName` should match config elsewhere in docs as `mail.example.com`.

Update podman.md 
Generate systemd is deprecated and Quadlets are now used. I have spent some time getting Quadlet to work, so I added some findings to the documentation. It is my first time contributing to documentation, so excuse my English if it comes across a bit rambly.

I have only added information, and have not removed any. However, generate-systemd is now deprecated and slirp4netns is out in favour of pasta. Pasta in particular is a lot easier to configure, but is still complicated to include into a docker-compose, which I do not use anymore.

Using podlet you can also translate a docker-compose to a Quadlet. Quadlets themselves behave a lot like individual  compose files, but are managed by systemd.

chore(Dockerfile): COPY ClamAV database from debian images (#4160) 
Changes ClamAV image source from DockerHub clamav/clamav (Alpine) to clamav/clamav-debian. Only the Debian variant offers multi-platform images.

This isn't too important since we are only interested in taking a copy of the database from the image. It should however resolve a CI warning.

fix: Prevent stderr being written to /etc/postfix/main.cf (#4147) 
`stderr` is filtered by `grep` to discard unwanted (expected) log noise when appending the override `postfix-main.cf` content (_updated settings did not replace earlier defined instances_).

That `grep` filter introduced a regression into DMS v14 release, since any other `stderr` content not being excluded was now blended into `stdout` and redirected with the original `stdout` output for the `postconf -n` command.

The fix is to ensure the `grep` output is redirect to `stderr` to avoid that mishap.
